Welcome to an Upper Deck dining experience celebrating the excellence of Southern Bluefin Tuna

Carving & Feast.

The evening begins with an arrival canape and drink before the thrilling carving ceremony commences in the main restaurant. Freshly caught in Tasmanian waters by Mures very own fishing vessel Selkie, this ceremony will see a whole Tuna respectfully presented and sliced by Fisher Jock Mure.

Guests will be invited to taste samples straight from the frame, before being treated to a 4-course degustation menu prepared from the freshly carved Tuna. Known for its vibrant colour, texture, and rich umami flavour, each course showcases the versatility and freshness of this premium fish.

Throughout the evening, every dish will be paired with renowned Pooley Wines selected to complement each course and presented by 3rd generation family member and Brand Ambassador, Matt Pooley. Mures and Pooley Wines are both enduring multi-generational Tasmanian family businesses which share a unique bond. Both come from modest but passionate beginnings and have grown sustainably to become iconic Tasmanian enterprises.

This impressive hook-to-plate feast celebrates not just Tasmania’s renowned seafood & viticulture industries, but also the time-honoured practice and knowledge of two third-generation Tasmanian families.
